The finished wine displays gorgeous harmony, with taut red fruits mingling with a mouth-coating sense of river rocks, and a just-so level of extraction that holds the wine together without contributing any hardness.
Christophe vinifies each variety and each parcel separately, utilizing various techniques to bring out the best of each. All grapes are grown organically, and all fermentations occur spontaneously with native yeasts. The resulting wines are blended and aged 18 months in a mix of 225-liter barriques (25% of which are new), some neutral 600-liter tonneaux, and a touch of clay jar and concrete.
