Dry and lean with some more traditional notes of green apple and citrus upon opening, this wine goes through a metamorphosis the longer it’s exposed to air - green apple notes give way to baked apple, and citrus notes mellow and give way to notes of beeswax and honeycomb. In fact, the longer you leave the wine open, the more exotic it becomes. There’s a little salinity as well as a suggestion of alpine herbs and even a kind of nuttiness that gives the wine additional complexity and texture.
