The esteemed Vers Cras vineyard, in the commune of Solutré-Pouilly, was elevated to premier cru status with the 2020 classification, and Cheveau’s old holdings here comprise plantings from 1950 and 1987. Always their most balletic and powerfully mineral Pouilly-Fuissé, Vers Cras spends 12 months in 600-liter oak barrels only a tiny fraction of which are new, followed by 12 months settling in stainless steel before bottling.
