A unique Israeli wine with a fantastic complex flavor, with hints of Surinam Cherry, dry fruit, and minerals. A full bodied, rich wine, it has the Chenin Blanc's characteristic balancing element of acidity.
Sourced from their estate vineyard in the western edge of the Upper Galilee at 800m ASL. Soils are composed of a gravelly flint (silex) clay. Hand harvested then gently whole-cluster pressed. Slow (6 months) natural fermentation in oak. Spontaneous malo-lactic fermentation. Aged 9 months on lees in neutral French oak barrels and Austrian oak oval.
