Nebbiolo and Croatina from a 2.5 hectare vineyard within the Municipality of Grignasco, on the Traversagna road that leads to Boca. 30-year-old vines planted at 400m above sea level. Volcanic porphyry soils that originated from the explosion of a supervolcano 280 million years ago. Nebbiolo and Croatina hand harvested in two separate passes in the second half of October. Nebbiolo fermentation takes place as partial whole cluster over 20 days with 2 months on the skins while Croatina is fermented as rosé. Wine is transferred to inert vessels before end of year and aged on its lees until the following spring. Bottling takes place at the end of summer and rests in bottle a minimum of 6 months prior to release.
